Ingredients:
- 2 tbsp (30 mL) Vegetable oil
- 1 each Onion, diced
- 4 cloves Garlic, minced
- 1 each Red bell pepper, diced
- ½ cup (125 mL) Tomato paste
- 1 tsp (5 mL) Chili flakes, dried
- 2 tbsp (30 mL) Red wine vinegar
- ¼ cup (60 mL) Brown sugar, packed
- 2 tsp (10 mL) Salt
- 1 tsp (5 mL) Black pepper
Method:
- Heat oil in a small pot. Cook onions, garlic and red bell pepper until onions are caramelized on a low heat for 10 minutes, stirring often to prevent burning.
- Stir in tomato paste, chili flakes, vinegar and sugar. Cook for an additional 10 minutes.
- Remove pot from stove and purée using a hand blender.
- Season with salt and pepper
