Ingredients:

  • 2 tbsp (30 mL) Vegetable oil
  • 1 each Onion, diced
  • 4 cloves Garlic, minced
  • 1 each Red bell pepper, diced
  • ½ cup (125 mL) Tomato paste
  • 1 tsp (5 mL) Chili flakes, dried
  • 2 tbsp (30 mL) Red wine vinegar
  • ¼ cup (60 mL) Brown sugar, packed
  • 2 tsp (10 mL) Salt
  • 1 tsp (5 mL) Black pepper

Method:

  1. Heat oil in a small pot. Cook onions, garlic and red bell pepper until onions are caramelized on a low heat for 10 minutes, stirring often to prevent burning.
  2. Stir in tomato paste, chili flakes, vinegar and sugar. Cook for an additional 10 minutes.
  3. Remove pot from stove and purée using a hand blender.
  4. Season with salt and pepper
